Friday Night Spanish Chicken

This is our Friday-night favourite, a wonderful dish for entertaining friends or for an extra-special family dinner. I hope you enjoy it as much as we do! 


4-6 boned chicken legs, or however many you need for your group
4-6 slices of bacon (or more if you have increased the amount of chicken) 
1 small punnet of cherry tomatoes
½ C pitted olives
A few cooked artichokes
1 dozen baby potatoes
2 large mushrooms, sliced
6 small red onions
Savour & Spice Lamb Marinade


Lightly coat the chicken in our Savour & Spice Lamb Marinade. Then wrap each leg of chicken with bacon. 

Put all the veges on the bottom of a baking dish, then place chicken on top and cover the entire dish with tin foil. Bake in the oven at 180 degrees C for 20 minutes, then remote the foil and continue cooking until the chicken is browned and cooked through,  approximately another 20 minutes.

Serve on brown rice and enjoy. Delicious!
