For veges, rub through chopped pumpkin, kumara, red onion and parsnip with a bit of olive oil; add rosemary and thyme, then bake for 40 minutes in a moderately hot oven.
Also excellent for making a dip using sour cream, tuna or salmon and lemon wedges.
